So, onto some information on grape growing to help you get started...
The history of growing grapes dates back to the Neolithic period and the knowledge of how to grow grapes for winemaking has been documented for over four thousand years. It is a process that was seen all over the world in all of the major civilizations and on every continent except Antarctica. The process of growing grapes and making wine today is just as rewarding as it has always been and no better than when enjoying a glass with friends.
There are two groups of grape varieties to choose from when you start growing grapes, the European varieties and the hybrids. The European varieties are generally chosen for growing between thirty and fifty degrees of latitude (North or South) and the hybrids are required outside those areas because of the shorter growing season. The hybrids have been adapted to accommodate a harder winter and a greater resistance to disease. The color of the grapes will also influence the color of the wine so bear that in mind when choosing your grapes.
Your new vines will need to be established before they can produce their first crop and that will take three years and the quality of the wine will reflect the quality of the vine, not the skill of the winemaker. A good wine producing grape will need a dry, nutrient-poor soil in order to grow the grapes slowly and keep them small so that the skins, where the color and flavor come from, are a higher proportion of the yield, rather than large juicy grapes suitable for eating. You will need to choose a well drained site with access to full sunlight.
It’s not enough to know how to grow grapes but when to harvest them is also critical. Many beginners harvest their grapes too soon but grapes won’t ripen any further once they’re cut from the vine. They must be fully ripe and disease free. The weather will also affect the crop and must be allowed for. If you’re growing hybrids, they may be high in acidity and this may need to be reduced chemically before you add yeast. There are different yeasts available for winemaking and they will influence the flavors and characteristics of the wine. The fermentation will take about a week and the wine can then be left to clear before bottling and left to mature further. Your local wine store should be able to supply you with bottles and corks. Most wines have little potential for improvement and are best drunk young but fine and complex wines need time to mature in order to reach their best flavor. Red wines get paler with age, while white wines usually darken.
